Strawberry Season in NC

Springtime signals the start of strawberry season in NC. You can find fresh strawberries at the local fruit stands and farmer’s market this time of year. This year the strawberries are especially sweet and juicy, which makes this cobbler irresistible. I was given a box of fresh strawberries from a dear friend and knew I wouldn’t be able to eat them all before they went bad, so I found some recipes that called for this plump red berry. I found this fresh strawberry cobbler recipe at Divas Can Cook.

My grandmother always made peach cobblers when I was growing up. I remember enjoying the cobbler part much more than the peach part. I have never tried making my own cobbler until now and I didn’t realize it was so easy to make. Other than the strawberries, I had all the ingredients needed to make this dessert.

Begin by washing the strawberries and patting them dry. Remove the tops and slice into fours.

Once you have about 2-3 cups of strawberries sliced, add the 1/2 cup of sugar to the fruit and toss gently to coat all the berries.

Next step, combine the dry ingredients and whisk them together. Then add the milk, melted butter, and vanilla. Mix until combined but do not mix too thoroughly. It is ok if the batter is lumpy.

Add the cobbler mixture to your greased baking dish. Then add the sugared strawberries to the top. This is just a topping and does not need to be stirred into the batter.

Bake at 375 degrees for 35-40 minutes or until the center is cooked through. My cobbler took closer to 45 minutes to cook through. Depending on the size of your baking dish, your cobble may cook faster or take more time.

Ingredients

  • For the topping:
  • 2-3 cups of fresh strawberries

  • 1/2 cup of sugar

  • For the crust:
  • 1 cup of all-purpose flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1/2 cup of sugar

  • 1 cup of whole milk

  • 1/2 teaspoon vanilla extract

  • 1 stick of unsalted butter, (8 TBS) melted

Directions

  • Preheat oven to 375 degrees F.
  • Grease baking dish.
  • Rinse strawberries, pat dry, and remove the tops, then slice into fours.
  • Add 1/2 cup sugar to the diced strawberries and toss to coat.
  • In a separate bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar.
  • Next, add in the melted butter, milk, and vanilla extract.
  • Stir the mixture until combined. Don’t overdo the mixing.
  • Pour the cobbler mixture into the baking dish.
  • Spoon the strawberries on top. No stirring is required.
  • Bake for 35-40 minutes or until the center is cooked through.
  • Best if served warm.

Notes

  • This cobbler is deliciously served alone and pairs well with a hot cup of coffee.
  • Cobbler can be served with whipped topping or ice cream
