If you have never had a poke cake, you don’t know what you are missing. Poke cakes have a secret ingredient: PUDDING. This recipe has you poking holes in the baked cake, then pouring pudding over the cake. The outcome is amazing. I love cake, but typically after a day or more, the cake dries out and it just isn’t as appetizing. Poke cakes do not dry out. They are deliciously moist from start to finish. And so easy to make.
I discovered poke cakes many years ago at The Country Cook. Now poke cakes are the family favorites for birthdays and holiday gatherings.
Step by Step Instructions
For my poke cakes, I like to keep it simple and used pre-packaged ingredients. You will need your favorite cake mix in lemon flavor, lemon instant pudding, and lemon Oreos. It may sound like lemon overload, but trust me, they all blend well together to give it a sweet lemony flavor, without being too rich.
Prepare the cake mix according to the directions on the cake mix box. Depending on the brand, the directions may vary; including the measurements of added ingredients and baking times. Pour the cake mix into a 9×13 baking dish and bake according to the directions on the package.
Once the cake is baked, allow it to cool for a few minutes then poke holes into the cake using the handle of a wooden spoon, chopstick, or something similar. I tried using a straw once and learned quickly that would not work. The opening of the straw captured the cake and removed it. The goal is to push the cake down to the bottom to make an opening for the pudding, not to remove any of the cake.
Next, combine the two boxes of pudding mix with 4 cups of milk. Then mix well until the mixture is free of lumps. Slowly pour the pudding over the cake, mindfully filling the holes. Place the cake in the refrigerator and chill for 2 hours, allowing the pudding to set. The cake can also sit in the refrigerator overnight. Once the pudding is set spread the whipped topping over the pudding.
In a food processor, crush the Oreo cookies. Place about 5-7 cookies in the processor at a time. Crush enough cookies to cover the top of the cake, about 10-15 total. Add a few whole cookies to the top as well.
The cake is ready to serve. Perfect for birthdays, picnics, cookouts, potlucks, or anytime you just want a delicious piece of cake.

Ingredients
One box of lemon cake mix
*(3 eggs, 1 cup of water, 1/2 cup of oil; ingredients needed for the cake)1- 8 oz container of whipped topping
1- 20oz. package of lemon Oreo cookies
2- 3.4 oz boxes of instant lemon pudding
4- cups of milk for the pudding
Directions
- Preheat the oven to 350 degrees.
- Prepare cake mix according to the directions on the box.
- Bake cake in a 9×13 baking dish following the baking times on the cake box.
- Once the cake is baked, allow it to slightly cool then poke holes in the cake.
- Combine 4 cups of milk with the two packages of pudding. Whisk until the pudding mixture is smooth and free of lumps.
- Slowly pour the pudding mixture over the cake, the pudding will fill the holes.
- Place the cake in the refrigerator and let it cool for at least 2 hours to allow the pudding to set. You can also let the cake and pudding set overnight.
- While the pudding sets, crush 10-15 Oreo cookies in a food processor or place them in a Ziploc bag and -crush them with a rolling pin.
- Once the pudding is set, spread the whipped topping over the entire cake.
- Sprinkle the crushed Oreos on top of the whipped topping.
