The holiday season puts me in the mood to bake. In search of something sweet that makes me think of Christmas, I pulled out the reliable cookbooks from the shelf. After looking through several, I bookmarked a few recipes I wanted to try this season.
The first on the list: Peanut Butter Cookies. I found this one in an older Better Homes & Gardens Cookbook. This recipe is also available online on the Better Homes and Gardens website. One notable difference between the cookbook and the website: the cookbook listed 1/2 teaspoon of baking powder, but the website showed 1/4 teaspoon of salt instead of the baking powder. The recipe below follows the cookbook version.
These homemade cookies are soft, chewy, peanut buttery, and delicious. The familiar taste of these peanut butter cookies awakens all the nostalgia of Christmas past.
Nothing out of the ordinary is needed to make these delectable treats—just a few basic staples from your pantry.
Begin by combining the butter and the peanut butter using an electric hand mixer or a stand mixer.
Next, add the sugar, brown sugar, baking soda, baking powder. Once well combined, add the egg and the vanilla.
Once well mixed, slowly add the flour until the dough is well combined.
Roll dough into balls and place 2 inches apart on a cooking sheet.
Then using a fork, flatten the dough balls, making a criss-cross pattern.
Lastly, bake for 7-9 minutes, or until the bottoms are lightly brown.

1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1/2 teaspoon vanilla
1 1/4 cup all-purpose flour
Directions
- Preheat oven to 375 degrees. Line baking sheets with parchment paper or silicone mats.
- Combine the softened butter and the peanut butter using a hand mixer or stand mixer. Beat on medium to high speed for 30 seconds.
- Add the sugar, brown sugar, baking soda, and baking powder. Mix until well combined.
- Add the egg and vanilla. Continue beating until combined thoroughly.
- Slowly add the flour to the mixture.
- Once well combined, shape the dough into small balls. Arrange on the cookie sheet 2 inches apart.
- Flatten the dough balls, using a fork to make the criss-cross marks.
- Bake for 7-9 minutes or until the bottoms are brown.
