Cookies Packed with Protein

I was in the mood to bake this weekend and came across this pin for chocolate chip cookies using Kodiak Cakes pancake mix. Luckily I had everything on hand to make these sweet treats.

The first step is to combine the brown sugar and the butter using a hand mixer or stand mixer. Helpful hint: be sure to soften the butter before mixing. Not melted, just softened. I did attempt to soften the butter first, but apparently, I didn’t soften it enough. After making quite the mess, I managed to combine the two ingredients.

Once combined, add the egg and vanilla and mix well. Process the oats in the food processor to give it a flour-like consistency so that the cookies wouldn’t come out like oatmeal cookies. Next, add the pancake mix and the oats. Then fold in the chocolate chips.

The Kodiak Cakes website recipe didn’t provide much direction, so I had to wing it. Once the cookie dough is well combined, pinch a small amount of cookie dough, roll it into a small ball, and place it on the cookie sheet. I made my cookies small because I wasn’t sure how they would cook and didn’t want to end up with large mushy cookies. I recommend lining the cookie sheet with parchment paper or using a silicone baking mat. Bake at 350 degrees for 9-11 minutes.

After removing them from the oven, let them cool for a few minutes, then enjoy!

Ingredients

  • 3/4 cup butter-softened

  • 1 cup brown sugar

  • 1 teaspoon vanilla

  • 1 egg

  • 1 1/2 cup Kodiak Cakes buttermilk pancake mix

  • 1 cup of oats- slightly processed in the food processor

  • 3/4 cups of chocolate chips

Directions

  • Preheat the oven to 350 degrees and line the baking sheet with parchment paper or use a silicone baking mat.
  • Combine the butter and brown sugar using a hand mixer, or stand mixer. Mix well until creamy.
  • Add in the vanilla and the egg.
  • Next, add the dry ingredients, the pancake powder, and the oats.
  • Once the mixture is combined thoroughly, fold in the chocolate chips
  • Pinch off a small piece of the cookie dough and roll it into 1-inch balls.
  • Place on a cookie sheet and bake for 9-11 minutes.
