I am a little obsessed with pumpkin treats this time of year. Last weekend it was a Pumpkin Dump Cake, this weekend it is pumpkin chocolate chip cookies.
These pumpkin chocolate chip cookies are so soft and fluffy with just the right amount of sweetness. I made these cookies and couldn’t stop eating them. They are perfect with a hot cup of coffee.
These cookies are so easy to make. Begin by combining the pumpkin, sugar, egg, oil, and vanilla in a stand mixer. Mix until well combined.
In a separate bowl, combine the flour, baking powder, cinnamon, and salt. In a small bowl, dissolve the baking soda with one teaspoon of milk.
Add the flour mixture and baking soda to the pumpkin mixture. Then stir in the chocolate chips.
Using a cookie scoop or a tablespoon, scoop out some dough and place it on a cookie sheet. Be sure to line the cookie sheet with parchment paper or use a silicone baking mat; spray or grease the cookie sheet if neither is available.
Bake at 375 degrees for 10-12 minutes. Allow them to cool on a wire rack before serving. They are so good, it is hard to eat just one. Don’t say I didn’t warn you!

1 cup pumpkin puree
1 cup sugar
1 egg
1/2 cup canola oil
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt

1 tsp baking soda
1 tsp milk
1 cup dark chocolate chips
Directions
- Preheat oven to 375 degrees. Line a cookie sheet with parchment paper or use a silicone baking mat; spray or grease the cookie sheet if neither is available.
