Fall is upon us, which means everything PUMPKIN!! I love the smell of pumpkin: pumpkin candles, pumpkin hand soap, pumpkin lotion, pumpkin-flavored coffees, pumpkin desserts. There is just something so comforting about that scent.
To celebrate the season of “All Things Pumpkin”, I wanted to share this recipe for Pumpkin Dump Cake. I found this recipe at Instrupix.com and have made it a few times and it never disappoints. If you like pumpkin, you will love this cake. Super easy to make, with just a few basic ingredients. It does take at least one hour to bake, an hour of cooling time, and then some chill time in the fridge, so this one you may want to make the night before you plan to serve it. It is best to serve this cake chilled.
Preheat the oven to 350 degrees. Begin by melting two sticks of butter in the microwave and set to the side.
Next, combine the pumpkin, sugar, eggs, cinnamon, and condensed milk in a large mixing bowl. Use a whisk to combine all the ingredients thoroughly.
Pour the mixed ingredients into a greased 9 x 13 casserole dish. Next, top with the Spice cake mix. The final step is to drizzle the melted butter over the cake mix. Place in oven and bake for one hour.
Let the cake cool completely before placing it in the refrigerator to chill.
After the cake has chilled some in the fridge, it is ready to be served. This dessert is very similar to a cobbler, a soft and yummy base with a firm crumbly topping. Pumpkin dump cake certainly does well served plain but you can opt to serve with whipped topping or vanilla ice cream. This cake is sweet without being rich. I can’t get enough of it.
