Butternut squash in the air fryer makes an excellent side dish or, in my case, the perfect afternoon snack. We were recently gifted some fresh produce from our neighbor. I have never, to my knowledge, purchased a butternut squash. And it certainly isn’t my first choice when dining out.

I had no idea what to do with the squash, so I went to my reliable source for recipes…….Pinterest. I found an air fryer recipe at Everyday Family Cooking. Our air fryer is a new addition to our kitchen and has only been used a few times, so I was pretty pumped about finding this air fryer recipe for the squash.

Once I figured out how to peel and cut the squash, the rest was a breeze.

Step by Step Instructions for Air Fryer Butternut Squash

Begin by peeling and cutting the squash into small chunks. For the first squash I cooked, I peeled the skin with a knife; in the same manner, you might peel an apple or a cucumber. I used a peeler to remove the skin for the second squash I prepared. I highly recommend using the peeler versus a knife to remove the skin.

Once the skin was removed, I cut off the bottom of the squash and the top. Then cut it lengthwise in half. The center has a hole that contains seeds and guts similar to the inside of a pumpkin. Remove the seeds and soft stringy fibers. Then cut into 1-inch chunks.

Mix the squash with the oil, cinnamon, salt, and honey in a small mixing bowl.

Place in the air fryer basket in a single layer and cook for 10-15 minutes at 400 degrees, removing and shaking the basket at 5-minute intervals. The cooking time will depend on the size of the chunks and the amount of squash you are cooking. The first squash I cooked was tender after about 10 minutes, but I baked it for about 12 minutes. The second squash was much bigger, so there were more chunks, so the cooking time for the second batch was closer to 15 minutes.

Once the butternut squash is cooked through and tender, remove it from the air fryer basket and drizzle with more honey before serving. The combination of the salt and cinnamon, along with the sweetness of the honey, makes this dish feel like a dessert, not a vegetable.

Sweet and salty, tender butternut squash

Ingredients

  • 1 Butternut squash- cut into cubes

  • 2 Tbsp Olive Oil

  • 2 Tbsp Honey

  • 1/2 tsp ground cinnamon

  • 1/4 tsp Kosher salt

  • 1 tsp honey for drizzle

Directions

  • Peel and dice the squash
  • Place diced squash in a mixing bowl and add ingredients (except the 1 tsp of honey)
  • Mix well and place in the air fryer basket
  • Cook 12-15 minutes at 400 degrees; shaking the basket every 5 minutes
  • Squash will be ready when it is fork-tender
  • Remove from the air fryer and serve immediately with a drizzle of honey
  • Enjoy!
