This Cheesy Sausage Pasta is warm, full of flavor, and easy to prepare. It has become one of my favorite comfort foods.

In my quest to find more macro-friendly meals, I found this recipe at SmileSandwich. I added sausage to give it the added protein. The following recipe uses whole wheat pasta, and beef smoked sausage. I have also made this recipe using red lentil pasta and turkey Polska Kielbasa, which lowers the calories and provides better macros. See the notes after the recipe block for details.

Begin by preheating the oven to 400 degrees. Prepare the cherry tomatoes by cutting them in half.

Place the sliced tomatoes in a 9 x 13 baking dish, then add the olive oil, salt, pepper, and garlic. Stir to coat the tomatoes in the oil and seasoning.

Unwrap all the cheese wedges, then arrange them in the center of the dish—Bake for 30 minutes.

While the cheese and tomatoes bake, boil the pasta according to the directions on the package. Save at least 1/4 cup of pasta water.

While the pasta cooks, slice the sausage into coin-sized pieces.

Once the baking is complete, remove the baking dish from the oven and stir the cheese and the tomatoes.

Then add the cooked pasta and the sliced sausage. Stir well to combine. If it is too thick, slowly add some pasta water until desired consistency is achieved.

Ingredients

  • 8 oz. whole wheat pasta

  • 1/4 cup olive oil

  • 2 tsp garlic, minced

  • 8 wedges, Laughing Cow original cheese

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 12 oz. Hillshire Farms, Beef Smoked Sausage

  • 10 oz. cherry tomatoes

Directions

  • Preheat the oven to 400 degrees
  • Cut tomatoes in half and place them in a 9 x 13 baking dish.
  • Add the olive oil, salt, pepper, and garlic to the tomatoes in the baking dish and mix well.
  • Unwrap the cheese wedges and place them in the center of the baking dish.
  • Bake for 30 minutes
  • While the tomatoes and cheese bake, boil the pasta according to the directions on the package. Reserve 1/4 cup of the pasta water.
  • Slice the sausage into coin-sized pieces.
  • After 30 minutes, remove the baking dish from the oven and stir the cheese and tomatoes together.
  • Add the cooked pasta and the sliced sausage to the baking dish and stir until well combined. Add the reserve pasta water if too thick.
  • Enjoy!

  • I like to use sausage for this dish because it is pre-cooked; however, the sausage can be substituted with chicken or other protein of your choice.
