Spicy, Rich, Cheesy Casserole

Don’t let the long list of ingredients deter you from making this cheesy and rich casserole. In just a few simple steps, you can be enjoying this delicious dish. I’ll admit I was a little nervous about making alfredo sauce from scratch, but this recipe is super easy to follow. I found this recipe at Let’s Dish Recipes.

Begin by cooking the pasta until just al dente, then drain. I chose elbow macaroni for this recipe, but feel free to use your favorite pasta.

While the pasta is cooking, melt the butter in a large skillet over medium heat. Once the butter is melted, add the garlic and cook for about 1-2 minutes.

Next, add the chicken broth and whisk until smooth. Once smooth, add the heavy whipping cream and stir until well combined. Then add the seasonings and simmer until the alfredo sauce thickens.

When the sauce has thickened, add the cheeses to the sauce. Continuously stir over low heat until the cheeses are completely melted, and the sauce is smooth.

Next, add the sliced sausage and the cooked and drained pasta. At this point, I realized by a large skillet was not quite large enough. I transferred everything to a large stockpot so I could mix everything without making a complete mess.

Stir all the ingredients together, then pour into a 9×13 casserole dish and top with the remaining mozzarella cheese. Place in the oven and heat under the broiler for a few minutes until the cheese is bubbly and melted.

The final product is an amazing casserole dish full of rich alfredo flavor, a little bit of spice, and lots of cheesy goodness.

Ingredients

  • 16 oz dry pasta

  • 3 tbs butter

  • 2-3 cloves garlic, minced

  • 3 tbs flour

  • 1 cup chicken broth

  • 2 cups heavy whipping cream

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp cayenne pepper

  • 1/4 tsp red pepper flakes

  • 1/2 cup grated Parmesan cheese

  • 2 cups shredded mozzarella cheese, divided

  • 1 package fully cooked smoked sausage (12-oz)-sliced into coin-sized pieces

Directions

  • Cook the pasta until just al dente, then drain.
  • Melt the butter in a large skillet over medium heat. Add the garlic and cook 1-2 minutes.
  • Stir in the flour. Then whisk in the chicken broth until smooth. Next, slowly add the heavy cream.
  • Add the seasonings: 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp cayenne pepper, 1/4 tsp red pepper flakes.
  • Simmer until sauce thickens.
  • Add 1/2 cup Parmesan cheese and 1 cup of mozzarella cheese. Stir continuously until cheeses are melted.
  • Add the sliced sausage and the cooked pasta to the sauce. Mix well.
  • Pour the combined ingredients into a 9 x 13 casserole dish. Top with the remaining mozzarella cheese.
  • Place in the oven and broil on low for about 2-3 minutes until the cheese starts to bubble.

Notes

  • You can use turkey or beef kielbasa or other smoked variety; make sure it is fully cooked.
