This Dorito Chicken Casserole is an easy mix, dump, and bake dinner. Beginner cooks can master this dish and impress their family and friends. Rotisserie chicken works great in this casserole, cutting out having to cook the chicken. New cooks may not be comfortable cooking chicken; they may not have a crockpot or not have the time to cook the chicken. We typically use a Rotisserie chicken, but I used some chicken thighs I had frozen this go-round. I tossed them in the crockpot at lunchtime, and they were ready to shred after work.

To prepare this dinner, crush the Doritos and dump them in a greased 9 x 13 casserole dish. I opened just a small corner of the bag to let some air escape, then crushed the Doritos in the bag. If I opened the bag, I would have to have one or two or twelve chips, so I may not have enough to cover the bottom of the dish. But that’s just me; you may have better self-control.

The next step is to mix the shredded chicken, or Rotisserie chicken, with the other ingredients. Combine all the ingredients in a large mixing bowl. Only use half of the shredded cheese; you will use the other half to top the casserole. Once combined, pour the mixture over the Dorito crust.

Place in the preheated oven and bake at 350 degrees for 20-25 minutes, so it warms completely through. Remove from the oven, and top with the remaining cheese. Return to the oven to bake for another 5 minutes to melt the cheese completely.

The final product is an ooey, gooey, cheesy, crunchy deliciousness. It is perfect from the oven and heats up well for leftovers.

Mix, dump, and bake casserole.

Ingredients

  • 3 cups of Rotisserie Chicken, or shredded chicken thighs or breasts

  • One bag of Doritos, 9.75 oz; Nacho Cheese or another favorite flavor

  • 10.5 oz. can of cream of chicken soup

  • 10.5 oz. can of cream of mushroom soup

  • 15.25 oz. can of black beans

  • 8.75 oz. can of corn

  • 8 oz. sour cream

  • 1 1/2 cups of salsa

  • 2 cups of shredded cheddar cheese or fiesta blend

Directions

  • Preheat the oven to 350 degrees.
  • Spray 9 x 13 casserole dish with cooking spray.
  • Crush Doritos in the bag and spread them on the bottom of the casserole dish
  • Set aside one cup of cheese.
  • Combine all the other ingredients in a large mixing bowl.
  • Spread mixture over the Dorito crust and bake for 20 minutes
  • Remove from the oven and add the remaining cheese.
  • Return to the oven and bake another 5 minutes or until the cheese has melted.
