Soft and Chewy Lemony Goodness
Jump to RecipeThis cookie recipe is great because it only takes a few ingredients and minimal baking time. I will warn you, though, it is a sticky mess, but it is worth it. My husband loves all things lemon, so when I came across this recipe from Tastes of Lizzy T, I knew I had to try it.
Mix Things Up
Start by combining the cake mix, the entire tub of whipped topping, and one egg. You can mix by hand; no hand mixer or stand mixer is required. Be sure to mix well until thoroughly combined.
The mixture will be sticky and thick. For me, it is easiest to use two spoons to pinch a small amount for each cookie. Once you drop the mixture into the powdered sugar and roll it around, it isn’t as sticky, and you can use your hands to roll it into a ball. If you prefer to keep your hands from getting covered in cookie dough, you can roll it around in the powdered sugar and plop it onto the cookie sheet. The result is the same.
We Are on a Roll
Place each sugared cookie dough ball onto a baking sheet about 1-2 inches apart. Be sure to line the baking sheet with parchment paper or use a silicone baking mat. Place in the oven and bake at 350 degrees for 10-12 minutes.
These cookies are so soft and chewy and offer the right amount of lemon flavor. If you want to try this recipe but aren’t a fan of lemon, you can substitute the cake mix for another flavor. Any cake mix flavor should work. Let me know if you try other flavors and how they turned out!

Lemon Crinkle Cookies

1 box lemon cake mix
1 8-oz Cool Whip
1 egg
1/2 – 1 cup powdered sugar
Directions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper or silicone baking mats.
- In a large bowl, mix together the cool whip, cake mix, and egg. Mix until well combined.
- Use a small scoop or two spoons to grab a small pinch of the cookie dough and shape it into a ball.
- Drop the ball into a bowl of powdered sugar and roll it around until completely covered.
- Place the powdered cookie ball onto the baking sheet about 2 inches apart.
- Bake for10-12 minutes, or until golden around the edges.
- Cool on wire cooling racks

- Have a family member that isn’t a fan of lemon? Just switch out the lemon cake mix for their favorite flavor.
